Jonathan Waxman is one of the most highly regarded chefs in the US and a pioneer of California cuisine. He is most known as the chef/owner of Barbuto in Manhattan’s West Village. We discuss his time as a Ferrari salesman, how he finds his zone in the kitchen, his dream restaurant, how he was instrumental in helping Thomas Keller find the original French Laundry and more.
